We developed a new hydrophobically modified SiO2-laden cellulose nanofiber emulsifier (HCNFSiO2). The Pickering emulsion armored with HCNFSiO2 showed stress-responsive rheological behaviors due to interfibrillary hydrophobic interaction. HCNFSiO2 has great applicability for stabilizing various complex emulsion formulations. This work is done by Duho!
